Great way to use the butternut squash!
We made this dish this past weekend and it turned out great (we added a lot of additional vegetables too!).
Roasted Squash & Tortellini Salad With Cranberries, Greens & Pepitas
We made this with butternut squash (instead of delicata squash), pomegranate seeds (instead of cranberries) and added balsamic vinegar and walnut oil. Delicious!
While our version wasn’t completely vegan (we used real milk instead), this was wonderful! We added spinach and roasted broccoli to the mac & cheeze after it was cooked.
Whole Wheat Pasta with Butternut Squash, Ground Lamb, and Halloumi
This dish was fabulous – we made it with F2F ground lamb and butternut squash.
We used this spice mix on the pork short ribs from the meat share the other week. We cooked the ribs for 3 hours and they were delicious!

Grilled Corn Summer Breakfast Hash
Nothing beats a hash! A quick and easy recipe with fresh summer vegetables that can be adapted to whatever you have on hand. The dish shines when made with Polyface Farm’s bacon and topped with a farm fresh egg.
Zucchini Fritters with Dill and Fresh Ricotta
The easiest way to use up a bounty of zucchini. Quickly grate them, mix in a little flour and water and pan fry. Super delicious and an easy weeknight meal.
General Tso’s Chicken (or Eggplant!)
When we saw this recipe we knew we had to give it a try. It was super easy and super fabulous. It blew away our go-to Chinese take out place. Try it with Polyface chicken or even eggplant.
